Tasty, chewy, packed with essential minerals, quick to prepare and a good source of stable energy. Could you ask much more of a cookie?!
Preheat your oven to 180C while you blend 250g ground almonds, 50g dates (optional) 50g room temperature butter, 1 tablespoon ginger, 1 tablespoon cinnamon, 1 tablespoon collagen powder (optional), 1 teaspoon bicarbonate of soda, 1/4 teaspoon salt and 4 tablespoons molasses in a food processor.
Squeeze, roll and squish two tablespoons of the mixture between your hands to make a cookie shape and place on a lined baking tray. Repeat until you’ve used all the mixture and then pop them in the oven.
Bake for 10-15 minutes and cool before storing in an airtight container. Great to add to packed lunches or to just keep on hand for emergency snack cravings!
