Big Pan of Greens

This is a super quick and easy way to get a range of seasonal green veggies into a meal. Use whatever you have in stock!

Chop / slice / dice and chuck in a big frying pan just a few of the following in roughly this order and leaving a few minutes between each addition:

  • Butter
  • Onions
  • Garlic
  • Celery
  • Dried or fresh chilli
  • Leeks
  • Courgettes
  • Cabbage
  • Kale
  • Spring greens
  • Fresh beans
  • Frozen peas
  • Splash of broth or stock
  • Worcestershire sauce
  • Salt and Pepper

Cook on a low heat until the veggies are soft before serving with one of the following:

  • A lightly fried fillet of fish
  • A couple of poached or fried eggs
  • A homemade meat patty (shape a patty from minced/ground meat, season and fry until cooked through.)
  • A homemade nut and bean burger
  • Cooked rice or quinoa.
