This is a super quick and easy way to get a range of seasonal green veggies into a meal. Use whatever you have in stock!
Chop / slice / dice and chuck in a big frying pan just a few of the following in roughly this order and leaving a few minutes between each addition:
- Dried or fresh chilli
- Spring greens
- Fresh beans
- Frozen peas
- Splash of broth or stock
- Worcestershire sauce
- Salt and Pepper
Cook on a low heat until the veggies are soft before serving with one of the following:
- A lightly fried fillet of fish
- A couple of poached or fried eggs
- A homemade meat patty (shape a patty from minced/ground meat, season and fry until cooked through.)
- A homemade nut and bean burger
- Cooked rice or quinoa.
