Grain-Free “Porridge”

This delicious grain-free porridge is full of healthy fats, protein, fibre and essential minerals and vitamins. It can be prepared very quickly for breakfast and topped with extra nuts and cream, with seasonal berries and with a sprinkle of cinnamon.

Simply blitz 1/4 cup flaked coconut, 1/4 cup almonds, 1/4 cup pecans, 1/2 cup organic dairy or coconut cream, 1 tablespoon collagen powder and one organic egg in a food processor. Then gently warm it in a saucepan before serving. Sweeten to taste with stevia, xylitol, erythritol or a little honey or maple syrup.
